The Rebbe was very against this. If the kids are over a certain (very young) age, it can cause complicated halachik problems of sofek kidushin. Even if a ring was not used, the kids might replay something like this on their own when there is no supervision and use a play ring.
I know a lubavitch girl who had to get a sofek get becuase she played this game when she was young. It might sound silly, but sofek kidushen can lead to sofek mamzairim if not handled properly.
The only mock weddings should be same gender like is done in bais rivkah.

This is nothing to toy around with. Some years back a couple of day school kids put together a “mock” wedding complete with ring, chuppah, etc. When the school administration got word of it they asked a sha’alos Rav and were told that the boy had to give the girl a get!
